Let them eat cake

Students love cake. They are offered it at most events, tempted with it before or after church…. In short, it is everywhere.

This simple microwave mug cake is great on its own or with my chocolate icing recipe which is also super easy to make.

It’s got a marble effect because I didnt manage to mix the cocoa powder into every corner of my mug! 😉

I like to turn mine out into a bowl but it can be eaten in a mug! Watch out or you’ll burn your mouth!

Ingredients:

1/2 a large or 1 medium/small banana (riper is better!)

1 tbsp flour (I used coconut flour)

[1 tsp cocoa powder] you can leave this out for a plain cake

1 egg

1 tbsp water (or coconut milk/any milk).

Method:

Mix all ingredients together (mash the banana first) in the mug of choice and put in the microwave for 2 minutes. This is for a 800watt microwave so it might be a little less if your oven is higher power and half a minute or so longer if it’s less powerful. Try it out! Basically it shouldn’t be raw and runny!
